Fingerling Potato Recipe that will be sure to please!

I absolutely have to share this easy recipe that I made last night!  It's very quick and anyone can do it! 

You will need:

8 medium size fingerling potatoes
1 small Shallot
1 heaping tablespoon of garlic
3 tablespoons of good olive oil
Salt & Pepper to taste

Preheat Oven to 375
Wash and peel all of your potatoes.  Cut them into thin circles (not length wise, horizontally)  In a large saute pan heat your olive oil on a medium/high heat.  Add your garlic once the oil is hot enough to make it sizzle when it hits the pan.  Cook the garlic for about 2 minutes and then add your shallots.  Cook those for about the same, 2 minutes.  Add your potatoes and saute them until they are coated with the oil, garlic and shallots.  Let them sit for about 4 minutes on medium heat, stirring them twice. Pull out a baking sheet and pour the potatoes onto it.  Place it in the oven for 15 minutes.

They are delicious with any main dish.
